Easy lemon cake recipe from our head patissier Geri Shipochka
Our head patissier Geri Shipochka is at home at the moment working on tempting sweet creations that we can't wait to taste very soon at hotel Rila.
Meanwhile, she shared with us an easy and delicious recipe for a moist and appetizing lemon cake, that will fill in your home with irresistible fragrance and delight all you senses.
You will need:
- Flour - 230g
- Baking powder - 3.5g
- Lemons - 2
- Eggs - 250g
- Sugar - 330g
- Salt - 2g
- Sour cream - 150g
- Butter (melted) -150g
For the glaze:
- Powder sugar - 190g
- Juice from one lemon
- Limoncello - 30g
Method:
Beat the eggs with the sugar for about 2 min at a medium speed of the mixer.
Then add the sour cream and mix again until you have a smooth mixture.
Add the dry ingredients and the zest from the two lemons.
Finally add slowly the melted butter.
Pour the ready mixture into a baking tray of your choice.
Bake the cake at 170 C for about 45-50 min, depending on the oven.
In the meantime, prepare the glaze by mixing all ingredients.
Once the cake is ready, let it cool down for 7-8 min. Then add the glaze on top of the cake.
The cake is moist, with nice texture and delicate taste. It makes the perfect company to your afternoon coffee at home.
